Depending on the size of your pan, deep fry the vadas in batches. When it turns light brown, turn them to the other side and cook until they are golden-brown on both sides. Takes app.. 5 to 7 minutes, each batch.

Normally the store bought ones stay crispy for longer time because they add more of butter. Since this was to be consumed immediately and more over in the morning, very less butter was added. Those times, you can serve them right away and also deep fry two times. This way the outer layer gets more crispy and crunchy!
Enjoy with tomato sauce!

Don't use water while you are grinding. Let the batter be coarse. Use just enough oil for frying in batches of 2 or 3 vadas at a time. If you use more oil, you will be left with used oil. Oil should not be reused more than 1 time, so use about 3 tbsp for deep frying.
These tasted great when it got cold too. But best when its hot along with Tomato Sauce!

Makes a great snack for kids as I saw that Konda didn't even ask what it was but eat few. Of course, the frying part can be avoided if you want to microwave it or do it in an appam pan.

It tasted simply great. If you don't like Spinach much, this is the best way to eat.
If you are conscious of deep frying, you can shallow fry this too. Spread oil in a pan and place the vadas and sprinkle few drops over it. Cook on both sides. This was also a good way.

I used the stock from this cooked mutton to the rice. You can make soup with it. Peppercorns have to be freshly ground and it should be coarse, not too fine not too coarse.
The taste of the fresh pepper along with curry leaves gives a heady taste!
